From Market to Plate: Ray's Saskatoon Berry Muffins
BAFM vendor Ray Yager is still sharing the wealth of Saskatoon Berry Season, and also the SECRET RECIPE for his delicious Saskatoon Berry Muffins.
Ray's Saskatoon Berry Muffins
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup rinsed Saskatoon Berries
2 beaten eggs
1/4 cup melted butter
1 cup milk
1 teaspoon vanilla
2 tablespoons brown sugar
1 tablespoon flour
1 tablespoon cold butter
Preheat oven to 400°.
Sift together dry ingredients.
Add in 1 cup rinsed berries and mix gently.
Combine wet ingredients in a separate bowl.
Pour into dry mix and stir just until combined.
Scoop mixture into muffin cups lined with paper muffin liners.
Combine the crumble ingredients using your fingertips to slightly warm the butter and create a streusel texture.
Sprinkle over each muffin.
Bake for 20 to 25 minutes, or until toothpick tests clean (Yields 12 muffins).
