Beef and zucchini soup
A bright yellow leaf fell in the backyard this week. There is no denying that autumn is approaching. We are feeling the crisp mornings and mild evenings. Schools are opening, and the hustle of activities and sports has begun. We at the Burke Area Farmers Market hate to see summer and the end of our Thursday markets, but we are ready for comfort foods. Burrito zoodle bowls
We are busy at the Burke Area Farmers Market , but we still like to eat well. One pot meals are a lifesaver for us on chaotic evenings, and when they include a plethora of fresh vegetables, we count it as even more of a win. We've added onions, garlic, sweet corn, tomatoes, zucchini, and Bijou Hills Grassfed ground beef to our weekly BAFM shopping list to make these Burritos Zoodle Bowls. Tomato and white bean salad
It's the most wonderful time of the year: Tomato Season! There are so many wonderful ways to enjoy fresh garden tomatoes, and Tomato and White Bean Salad is so good that we have it on repeat this summer. Marinating the thinly sliced, sweet red onions in the simple vinaigrette makes all the difference. We adore their tanginess combined with bright, juicy tomatoes, and earthy white beans. Beet dip
The Barbie movie hit theaters last weekend, and the whole world is awash in pink. Here at the Burke Area Farmers Market , we decided that if we can't BEET them, we will join them. (Vegetable pun fully intended.) We have blended roasted beets (sourced from one of several incredible produce vendors here at the BAFM ) with sour cream and seasoned it with herbs and B&L Honey to make a delectable earthy dip that is an absolutely fabulous shade of pink. Cucumber toast
Move over avocado toast. This summer, Cucumber Toast is where it's at. We are toasting thick slices of the beautiful rye and sourdough breads from the Bloom Sister's Booth at the Burke Area Farmers Market , spreading them with protein packed cottage cheese, and topping that with a deliciously fresh and crisp diced cucumber salad (of course made from cucumbers supplied by one of the many BAFM produce vendors).
