From Market to Plate: Salsa Roasted Potatoes

Raise your hand if you have home-canned salsa in your pantry! Let's toss it with some fresh potatoes from the BAFM vendors and serve these delicious salsa roasted potatoes along side some Bijou Hills Grass Fed Beef or K Mill Iron Ranch Chicken.

Salsa Roasted Potatoes

1 pound small potatoes, halved or quartered

2 tablespoons olive oil, divided

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 cup salsa

4 lime wedges

1/4 cup fresh cilantro, chopped

1/8 teaspoon kosher salt

Preheat oven to 400°F. Place potatoes on a rimmed baking sheet. Toss with approximately 1 tablespoon of olive oil. Bake 15 minutes.

Combine remaining olive oil, chili powder, ground cumin, and salsa. Pour over potatoes and toss to coat. Return potatoes to oven and bake 15-20 more minutes until potatoes are tender.

Squeeze lime wedges over potatoes; sprinkle with chopped fresh cilantro and kosher salt. (Serves 4)
