Bijou Hills Grassfed Beef is a loyal, long-time Burke Area Farmers Market vendor supplying our customers with delicious and nutritious cuts of grass fed beef. Prepared with sirloin, strip, or ribeye steak from Larry's freezer (and, of course, Ray's garlic), we can't resist the simplicity of Garlic Butter Steak Bites as a meal (with BAFM veggies on the side) or as a fun party appetizer.
Garlic Butter Steak Bites
1 1/4 pounds steak ~sirloin, strip, or ribeye~ trimmed of fat and cut into 1/2-inch cubes
2 tablespoons olive oil
2-3 cloves garlic, minced or grated
1 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons unsalted butter
2 tablespoons fresh minced parsley
Marinate the steak:
Combine the cubed steak pieces in a bowl or large zip-top bag with olive oil, garlic, salt, and pepper. Allow to sit for at least 15 minutes to marinate. Can be done up to a day in advance and stored in the fridge.
Cook the steak bites:
Heat a large cast iron skillet over medium-high heat. A drop of water in the skillet should sizzle and immediately evaporate. Once skillet is hot, add the marinated steak. Try not to crowd the pan. If the bites are touching, they will steam and not sear. Allow the steak bites cook for about 3 minutes without stirring or turning. They need time to develop the flavorful seared (browned) crust.
Stir the bites and continue to cook for another 2 minutes for medium (with a bit of pink in the middle). Add another minute or two for more well-done steak bites.
Toss with butter and serve:
When the steak bites have a nice crust on one side and are browned all over, turn off the heat. Add butter to the skillet and stir to coat the steak bites with butter. Sprinkle liberally with fresh parsley and serve immediately either with toothpicks (as an appetizer) or as a dinner entrée alongside potatoes, rice, or veggies.
