From Market to Plate: Fran's Green Goddess Dressing

We love making homemade salad dressings for Curt and Mandie's lettuces. GREEN GODDESS DRESSING takes advantage of flavorful fresh herbs and comes together so quickly.

Green Goddess Dressing

1 teaspoon anchovy paste 1/4 cup mayonnaise 1/4 cup full-fat Greek yogurt 1/4 cup parsley leaves 3 tablespoons basil leaves 1 tablespoon lemon juice 1 tablespoon finely chopped fresh tarragon leaves 2 tablespoons minced chives Salt Freshly ground black pepper


In a large measuring cup, combine the anchovy paste, mayonnaise, yogurt, parsley, basil and lemon juice. With a wand blender, process until smooth and uniformly green. (Alternatively, process in a food processor until smooth.) Stir in tarragon and chives. Adjust seasoning as needed with salt, pepper and lemon juice.

***Worcestershire Sauce can be subbed for the umami of anchovy paste. ***Adjust herbs to taste. More basil adds pepperiness and sweetness. More tarragon adds a bit of licorice flavor. Parsley bumps up the freshness. Chives lend a faint onion flavor. ***Tender herb stems also have a lot of flavor and can be blended into the mix. Woody ones will not blend smoothly, though. ***If your dressing seems a bit sharp for your taste, add a little honey to the blend.
